Rum Bar
Over 100 Rums. One Bar. Plenty Left to Discover.
You don't need to know anything about rum before you start.
More Than One Kind of Rum
Different islands. Different styles. Different stories.
Rum has been part of the Caribbean story for centuries, with different islands developing their own traditions, styles and ways of making it.
At Spiced Roots, we've built a collection of more than 100 rums, giving you the chance to explore just how different one bottle can be from the next.
Jamaica. Barbados. Trinidad. Guyana. Antigua and beyond.
The Caribbean has an incredible rum-making heritage, shaped by its history, sugar production, different distilleries and generations of knowledge.
There's a much bigger story behind the bottles on our bar — including parts of that history that are difficult and important to understand.
We won't try to tell all of it here.
That's what the conversations — and our Rum Masterclasses — are for.
Rum Cocktails
Rum doesn't have to be drunk neat.
Our bar brings rum into cocktails in plenty of different ways, from Caribbean favourites and familiar classics to our own creations. Whether you're coming in for dinner, staying for drinks afterwards or simply want to try something different, ask the team what they'd recommend.

Mojito
Havana Club 3yo rum, fresh mint leaves, fresh limes muddled with sugar syrup.

Dark n' Stormy
Goslings, lime, handcrafted ginger beer, bitters.

Piña Colada
Koko Kanu rum, coconut syrup, coconut milk, pineapple juice.

Classic Rum Punch
Wray & Nephew, lime, sugar, spice, bitters.

Georgetown Passion Fruit Rum Swizzle
El Dorado 3, passionfruit liquor, lime, passionfruit syrup, lemon, bitters.

Lychee Daiquiri
Havana 3, lychee liquor, Pierre Ferrand dry curaçao, homemade grenadine.

Taste. Ask. Discover.
Want to understand what's actually in the glass?
Our Rum & Cocktail Masterclasses bring producers, ambassadors and rum specialists into Spiced Roots for guided tastings and conversations, then take you behind the bar for a hands-on session making cocktails yourself.
You'll taste a selection of rums while discovering more about where they're made, how they're produced and the stories behind them — then learn about balancing flavours and the techniques our bartenders use before making your own.
They're designed for everyone — from someone tasting rum properly for the first time to people who already have a favourite bottle behind our bar. A relaxed, hands-on experience that's ideal for groups, celebrations or anyone wanting to learn something new.
Come curious. Leave knowing a little more.
Start at the Bar
Over 100 bottles can look intimidating.
They're not supposed to. You don't need to understand rum to enjoy it. Tell us what you normally drink, ask us a question or let the bar team point you towards something new.
